Chicken Soup With Swedish Dumplings


Chicken Soup With Swedish Dumplings- The dumplings contain cardamom seeds and minced almonds.  
1 1/2 qts. chicken broth
1 Tbsp. sugar
2 cups diced cooked chicken
2 tsps. margarine
1/4 cup flour
1 egg, beaten
1/4 cup flour     
8 blanched almonds, minced
1 cup milk
2 sprigs parsley, minced
3/4 tsp. salt
2 cardamom seeds, crushed or 1/8 tsp. nutmeg
Bring broth and chicken to boil in kettle. To make dumplings, in saucepan, blend flour and a little milk to a paste. Add remaining milk, salt, cardamom, and sugar. Cook until thickened, stirring constantly. Add butter and stir until melted. Pour over egg, mix and cool. Add almonds and parsley. Drop into gently boiling soup.
