Tuna Chowder


Tuna Chowder-without salt pork for those who observe meatless days
1 Tbsp. butter           
1 can (7 ozs.) tuna
1 onion, minced                           
1 cup diced potato
3 cups milk
1/2 cup diced celery
1 tsp. salt
1/4 tsp. pepper
1 carrot, medium dice                
       Dash of thyme
1 cup boiling water 
2 Tbsps. flour
       Minced chives
Melt butter in large soup pot, add onion, and cook until onion is golden. Add vegetables and water; cover and cook 15 minutes, or until vegetables are tender. Add tuna, 2 3/4 cups of milk, and the seasonings; heat well. Blend remaining 1/4 cup with flour and add slowly to hot mixture, stirring constantly. Cook until slightly thickened, stirring constantly. Serve with sprinkling of chives. Makes: 4 servings.
