Meat-ball Soup- No.2


Is an excellent soup, it is well seasoned, in the Italian way.
3/4 lb. lean ground beef
       Dash of pepper
2 eggs
1 small clove      garlic, crushed minced
2 beef bouillon cubes
       Flour
1/4 tsp. marjoram    
1 cup canned tomatoes
1/4 tsp. dried basil
1 small bay leaf crumbled
1/4 tsp. onion powder
2 Tbsps. uncooked rice
1 1/2 tsps. salt
Mix first 6 ingredients, 1/2 tsp. salt, pepper and 1 egg. Shape into 32 tiny balls; dredge with flour. Bring bouillon cubes, water tomatoes 1 tsp. salt and bay leaf to boil in kettle. Add meat balls and rice. Cover and simmer 45 minutes. Just before serving, stir in the remaining egg, beaten slightly with a fork. Makes 4 servings
